Ground Pork and Tomato Noodle Soup

  1. Prepare the rice vermicelli according to the package directions. Drain and divide between two bowls.
  2. Heat the oil in a pot over medium heat. Add the shallot and garlic and cook for about 30 seconds, until fragrant.
  3. Add the ground pork, oyster sauce, and 1 teaspoon fish sauce. Break the pork apart and cook until it is no longer pink.
  4. Add the tomatoes and cook for 3 to 4 minutes, stirring occasionally, until they begin to soften and release their juices.
  5. Add the water, chicken bouillon, mushroom bouillon, 1 tablespoon fish sauce, sugar, and MSG. Bring to a boil, reduce the heat, and simmer for 8 to 10 minutes.
  6. Ladle the pork, tomatoes, and hot broth over the noodles.
  7. Top with green onions and cilantro. Serve with lime wedges, chili oil, and fried shallots, if desired.
