Vietnamese salad is called goi, and there are several different versions. One thing that remains the same is that they’re tangy, spicy, sweet, and savory with lots of fresh ingredients. This one is just a simple Vietnamese-inspired cucumber salad made with Persian cucumbers, but feel free to add more vegetables like thinly sliced bell peppers.
Persian cucumbers are crunchy and seedless, making them a great snack. If you use English cucumbers, you can cut out the core to keep the salad from getting too watered down.
