Garlic Shrimp Fried Rice

If you have old rice in the fridge and shrimp in the freezer, garlic shrimp fried rice is a great and easy option for dinner! It’s so fragrant due to all the aromatics like garlic, ginger, and onions. Cold rice is mixed in with egg yolk for a golden color then stir-fried with aromatics, crispy garlic, and bean sprouts.

For this recipe, you do not have to cook and roll the eggs as I do in the video. You can just scramble them or mix them into the rice. Also, mixing the egg yolk into the rice before frying is also optional. It just helps give it a nice golden color!

If you don’t have old rice, just make fresh rice and then spread it apart on a tray to let the moisture/steam evaporate. You can also throw it in the freezer/fridge for a bit as well.

You can make your own crispy garlic for garlic shrimp fried rice, but I prefer to use Jus’ Garlic. It’s delicious and goes with just about anything! The photo below shows the brands for light Japanese soy sauce, fish sauce, and crispy garlic that I use.

Ingredients

  • Eggs

  • Shrimp

  • Sauce

  • For stir-fry

Instructions

  1. Marinate the shrimp with fish sauce, garlic powder, and a pinch of black pepper. Mix together ingredients for the sauce.
  2. Heat a large pan on high for 1 minute and then turn down to medium-low for 30 seconds. This will ensure that the oil you add will create a non-stick layer on your stainless steel pan. This step is not necessary for non-stick pans.
  3. Add oil, swirl it to cover the pan, wait for 30 seconds for the oil to heat up. Beat eggs in a bowl with fish sauce. Add eggs to the pan in a thin layer. Allow it to cook for a couple of minutes. Once it solidifies, you can start folding it up with a spatula (see video). Transfer it to a cutting board and cut them into strips. You can also just scramble your eggs! 
  4. In a large bowl, mix egg yolk with cold cooked rice to create a nice golden color. This is also optional. 
  5. With the same pan on medium heat, add about 1 tbsp of oil, add shallots and stir and cook for 1 minute, then ginger for 1 minute, then garlic and green onions for 30 seconds.  
  6. Add another tbsp of oil, then add shrimp, stir, and cook for 1 minute.
  7. Add more oil to the pan, then add rice and spread it apart in the pan. Let it cook for a minute or so. Add sauce on top of the rice and mix it until the sauce is fully incorporated. Spread the rice apart again so some of the moisture gets cooked off. If you want some crispy parts, then you can leave it alone and cook it longer at this point.
  8. Add eggs and bean sprouts and give it a good shake/mix. Scrape up any brown bits and mix them with the rice. That’s where the flavor is! 
  9. Top off with more crispy garlic (optional)
