Tom Yum Noodle Soup

This is my easy version of a tom yum noodle soup I had recently with my cousin! It’s sour, sweet, savory, and spicy!! I use tom yum paste, ground pork, and frozen fish balls for a quick and delicious weeknight meal. 

I like using rice vermicelli noodles, but you can use other rice noodles if you’d like. Also pictured is the tom yum paste I use. Be aware that you’ll need to adjust the seasonings depending on the paste you use. Use the measurements below as a guide, but please add the seasonings slowly so you can taste and adjust as you go.

This is just a quick and easy version of tom yum noodle soup, so feel free to add extra flavor by using fresh lemongrass and kaffir lime leaves if you’d like!

This is my easy version of a tom yum noodle soup I had recently with my cousin! It’s sour, sweet, savory, and spicy!! I use tom yum paste, ground pork, and frozen fish balls for a quick and delicious weeknight meal.

Instructions

    For soup:

  1. Heat pot on medium heat, add oil, garlic, and peppers. Cook for about 30 seconds. 
  2. Add tom yum paste and give it a stir for about 30 seconds until fragrant. 
  3. Add water, chicken bouillon, fish sauce, lime juice, sugar, and salt in small amounts. Taste to adjust as you go. Measurements will be different depending on the paste you use. If you want to reduce the amount of sugar, be sure to also reduce the amount of lime juice. Turn the heat to high and add optional fish balls.
  4. For pork:

  5. Heat pan on medium, add ground pork and break it apart. For this meat topping, we are not browning it. We want it to stay soft and tender. 
  6. Add garlic powder, fish sauce, sugar, and black pepper to the pork. Combine well. Add 1-2 tbsp of water and continue cooking until the meat is cooked. 
  7. To serve:

  8. Assemble bowls by adding cooked vermicelli to bowls. Add ground pork on top of the noodles. Ladle broth and fish balls into the bowl. Top with fried garlic and cilantro. 

Notes

  • Add salt, sugar, fish sauce, and lime juice in small amounts. Taste and adjust as necessary. Amount used will vary based on the paste you use.
