I used skin-on, bone-in thighs for the best flavor, but if you’re using boneless thighs, be sure to cut down on the cooking time!

Instructions
- Pat chicken skin dry. Season both sides with a little salt.
- Add oil to a cold pan. Place the chicken skin-side down. Do not overcrowd or skin will boil instead of sear. Turn heat to medium-high and cook for about 15 minutes or until skin becomes golden.
- Combine the ingredients for the sauce in a small bowl.
- Remove all but 1 tablespoon of oil/fat from the pan. Add the sauce to the pan. Turn heat on medium. When sauce starts to slightly bubble, add the chicken back in making sure to get the sauce on both sides. Turn off the heat.
- Garnish with toasted sesame seeds and chopped green onions (optional) and serve with rice and cucumbers or steamed veggies.
