This Beef and Potato Stir-fry (thit bo xao khoai tay chien) is perfect for a weeknight dish. It is meant to be served with rice as a meal!
I always got excited when my mom made this for dinner! She normally shallow fries the potatoes, but sometimes I prefer the hands-off approach of baking them in the oven! If you want an even easier approach, you can air-fry some frozen french fries for this dish. Then it’ll more closely resemble the Peruvian dish, lomo saltado.
Once you have your potatoes cooked, you just do a quick stir-fry with some marinated flank steak, onions, and garlic! Serve this beef and potato stir-fry with rice for an easy weeknight meal. Feel free to add more veggies like bell peppers or tomatoes to the dish to increase your veggie intake!

Instructions
- Pre-heat oven to 450F
- Combine beef with seasonings and let it sit while you prepare other ingredients.
- Cover potato slices with oil, salt, and pepper. Place on a baking tray and cook for about 6-8 minutes on each side or until they’re slightly golden but tender on the inside. Broil for more color if needed.
- Have all your ingredients ready to go before you start your stir-fry: onion, garlic, potatoes, and beef.
- Heat pan on medium heat and add oil after 1 minute. Swirl to coat the pan and then add onions. Stir and cook for 1 minute. Add garlic and cook for 30 seconds.
- Add beef and stir-fry until the meat is cooked. Add potatoes and gently combine with the beef. Turn off the heat. Taste and add salt and pepper if needed. Serve with rice!
