Flat iron is lean and tender! But feel to free to use your favorite cut of beef. Ribeye would be very tasty with a lot more fat! Yum!

Instructions
- Prepare all ingredients for the wrap. Combine ingredients for the sauce in a small bowl.
- Heat stainless steel pan on high heat for 2-3 minutes. Add oil.
- Once pan starts to smoke, season your steaks with salt and pepper. (Don’t season beforehand or it’ll draw out moisture from the steak preventing a good sear)
- Sear both sides for approximately 3 minutes or until internal temperature registers 120F for medium rare.
- Transfer steak to a cutting board and let it rest for at least 10 minutes for the juices to redistribute. The temperature will continue to rise another 5 degrees or so.
